Feed your family with summer veggies



Summers always bring bright and vibrant colors that make the entire atmosphere look beautiful. Sweeping away the white snow of winter, summers creep in with amazing colors in the environment. Dusting away the snow, trees starts blooming with new and fresh off springs. Fruits and vegetables colored in different shades with different taste are found everywhere in summers.

During summers trees starts blooming new flowers, thus you find ample of veggies and fruits in the markets. Many vegetables are seasonal and thus, they can be consumed in particular season itself. Even the nutrients present in them are compatible to newly season. This is the perfect time to get all these summer vegetables in your family. Include them in your daily diet, as intake of vegetables is beneficial for good health. Fresh green veggies are loaded with vitamins and other essential nutrients which are necessary to fight the infections. They also contain good amount of water that keeps your body hydrated in sizzling heat.

The summer vegetables that will occupy your table are as follows:

Arugula:Arugula

Arugula is an amazing source of vitamin C and folate. They even supply good amount of calcium to your body. They are good combination with olives, grilled onions, tomatoes, and cheese.  Club them with different veggies for delicious salads. Choose for small and soft leaves while you purchase arugula. If you want more peppery flavor then you may opt for large leaves. Wash them well in running water to wash away all dirt.

Avocadoes:

An excellent source of vitamin B6, C, and A; avocadoes are good source of folate, thiamin, and magnesium.  Never cook avocadoes, add them to refreshing salads. Dress them with olive oil and lemon juice. You may even club them with mashed salsa. Look for uniform color without spots and bruises while you purchase avocadoes. Check out if they yield when gently pressed. You may store them at room temperature and apply some lemon color for discoloration. Always use a scoop to remove flesh.

Collards: Collards

Collards are fabulous source of vitamin A, C, and folate. Steam them or just cook with some olive oil for delicious stews. Always purchase fresh green collards that are crisp, tender, and bright in color. You need to refrigerate this vegetable in plastic bags. Rinse it many times before using them in any dish and do not use thick leaves.

Okra:

Okra is very good source of folate and vitamin C, which is very much beneficial for good health. Okra can be cooked in different ways such as; they can be added to stews, soups, and sauces. It thickens the soup and gives an amazing flavor to the soups. You can complement your delicacies with corn, peppers, and tomatoes. Choose small and velvety okra, which are without spots and damages. They can be stored for three to four days in refrigerator.

Peppers: Peppers

Amazing source of vitamin B6 and A, peppers are also good source of vitamin C. Peppers cane be consumed in many ways; raw peppers can be clubbed in salads. You can even grill, steam, fry, or roast them with different other veggies. Select deep, bright, glossy, and uniform colored peppers. They are available in red, yellow, orange, and green color. Do not purchase the peppers with soft spots. You can keep them in refrigerator for more than three days.

Squash:

Squash in the richest source of vitamin C, thus it is good antioxidants. They are best when consumed baked or drizzled with olive oil, pepper, and salt. Always shop for smaller squash with glossy and thin skin. They remain in refrigerator for more than three days.

    I love peppers, squash and okra.Although okra is a bit sticky but it does have a lot of nutritional value and it goes great with soups.Nice article!!!
